2024 Limited Batch #1: Ali Shan Zin Hsuan

This year we made some quite different maple steam teas…one light & one dark.

Batch #1 is a lighter roast with more distinct smokey aroma, golden herbacious body, maple, oak barrel, peat, complex finish.

We carefully steamed our Ali Shan Zin Hsuan Oolong over maple sap, then finish roasted over homemade charcoal during our 2023 maple sap boil (the syrup is really good too, but not for sale!). This custom process is during the later stages of the sap boil, giving a unique maple touch! After the maple syrup is finished, we let the coals simmer down, then do a finish roasting over the coals.

This year we’ve added a new step…actually adding maple sap with the steamed tea leaves before roasting! This has added more complexity, a smoother mouth feel, & just a touch of sweetness!

Charcoal: Vermont Maple & Cherry

Limited quantity…we make this in small batches…it takes a lot of work, & we can only do it during sugaring season, so it sells out! Enjoy..
