Bái = White
A new white tea offering from Yunnan Province in southern China. This special cultivar is a mix between the native Yunnan large leaf varietal & the eastern Chinese Bi Luo Chun varietal (a renown green tea). The many youthful tips, early season harvest, & unique cultivar gives this tea both traditional white tea & green tea notes…smooth, bright, & crisp…& most of all quite fresh!
Teahouse Staff Tasting Notes:
A balanced cup with both sugarcane sweetness and earthy, vegetal notes. Fresh and light, finishing with the bite of a hachiya persimmon just before ripeness.
春曉 (Chūn Xiǎo)

春眠不覺曉,
處處聞啼鳥。
夜來風雨聲,
花落知多少。
Chūn mián bù jué xiǎo,
chùchù wén tí niǎo.
Yè lái fēngyǔ shēng,
Huā luò zhī duōshǎo.
Springtime, half-asleep, unaware of daybreak,
Everywhere around me the singing of birds.
After a night of wind and rain,
I wonder how many blossoms have fallen.
A prominent landscape poet from the Tang Dynasty, Meng Haoran lived most of his life as a hermit in and around his hometown of Xiangyang (in modern day Hubei Province). His most famous poem, 春晓 (Spring Dawn/Spring Morning), comes to mind as we taste the first harvests of spring amidst a rainy mud season here in Vermont.
