2026 Limited Batch #1: Mei Shan Roasted Oolong
Our latest limited batch maple steam…with a medium roasted Taiwanese oolong, finished with a cherry and maple charcoal roasting.
Teahouse Staff Tasting Notes:
Strong sugarhouse notes, vanilla, burnt toffee, chicory root, & chaga.
This year, we played with more frequency of steaming to bring out more aromas. The sap season was quite dry, so our wood was too…and therefore less smokey. Once again we added a small amount of maple sap to the tea before the final drying. This gives a bit more sweetness to the complexity of the cup! Then, after the maple syrup is finished, we let the coals die down and do a finish roasting over the coals! (another step that requires meticulous attention).
Once again we’ve added actual maple sap into the tea during the steaming process. This gives a bit more complexity, thickness, & sweetness!
Charcoal: Vermont Maple & Cherry (mostly maple)
Limited quantity…we make this in small batches…it takes a lot of work, & we can only do it during sugaring season, so it sells out! Enjoy..
