Maple Steam Mei Shan Roasted

2025 Limited Batch #1: Mei Shan Roasted Oolong

This year we did a heavier maple sap steam with our darker roasted Taiwanese oolong, finished with a cherry and maple charcoal roasting. This is the least smokey of our maple steamed teas, with strong sugarhouse notes, thick dark amber infusion, & a sweet finish of birchbark, maple, & chantrelles.

We carefully steamed our oolong tea…….over maple sap!…then finish roasted over homemade charcoal during our 2025 maple sap boil (the syrup is really good too, but not for sale!). This custom process is during the later stages of the sap boil, giving a unique maple touch! After the maple syrup is finished, we let the coals simmer down, then do a finish roasting over the coals.

This year we’ve added actual maple sap into the tea during the steaming process. This gives a bit more complexity, thickness, & sweetness!

Charcoal: Vermont Maple & Cherry (mostly maple)

Limited quantity…we make this in small batches…it takes a lot of work, & we can only do it during sugaring season, so it sells out! Enjoy..
